‘They’ say, the only thing you can count on are death and taxes, but I’m adding something else to the mix…change. Everything around us is in constant change, somethings take time to change while other things change in a moments notice. Okay, I’m being a bit dramatic…but still.
Even something as simple as pasta is changing. Instead of New Year Resolutions, this year I made goals…20 goals for the year 2020. The month of January I had decided to go vegetarian, just a short 30 day period of my life…easy right? Nope, is the short answer. The longer answer is I now had to ‘change’ how I thought about food and what I would have for breakfast, lunch, and dinner. When hungry my natural tendencies are to think…chicken, beef or maybe fish, NEVER is my first thought zucchini, broccoli or squash. Let me say that again….NEV-VVVVVEEEERRRRR!
One of my concerns when doing this was the fear of gaining weight because of eating too much pasta or carbs, but I found a simple solution…Zoodles. Do go, stay a little longer and keep reading for a minute and hear me out. I was shocked that they were so easy to make, and even more shocked that you couldn’t tell they were a veggie instead of regular pasta. It was a simple Lo Mein recipe that had zoodles in it instead of noodles and as I sat snarfing it down I kept thinking to myself there is no way I was eating zucchini. Seriously, you have to try them in your next pasta dish.
Change, sometimes is surprisingly good!
